Aspartame is an artificially synthesized sweetener that belongs to the category of amino acid dipeptide derivatives. It was first discovered in 1965 in the course of medical research focused on developing anti-ulcer medications. This substance features many outstanding properties: it provides extremely strong sweetness—150 to 200 times that of sucrose—so only a very small amount is required in applications.   • Stability:

Stable in a dry state.

It is prone to decomposition under humid and hot conditions or in high pH environments, generating diketopiperazine (DKP), aspartic acid and phenylalanine, resulting in the loss of sweetness.

In aqueous solution, the stability is at its peak around pH 4.3 (with a half-life of approximately 260 days at 25°C).
